Gameday Series Recipes: Reuben Sliders  

 

As we continue our Gameday Series of recipes, today we have another crowd pleaser, Gameday Reuben sliders.

Let me start this recipe off with a stern warning! Do not make these sliders for your friends unless you want to become the “slider person.” You will be asked to bring these sliders to every function moving forward.

Ingredients for Gameday Reuben Sliders

1000 Island Salad Dressing:

  • ¼ c. Yellow Onion (Finely Chopped)
  • 1 c. Mayonnaise
  • 2 tbsp. Ketchup
  • 1 ½ tbsp. Lemon Juice
  • ½ tsp. Paprika
  • 1 tsp. Sugar
  • 2 tbsp. Pickle Relish

Butter Sauce:

  • 8 tbsp. Butter (1 Stick)
  • 2 tbsp. Worcestershire Sauce
  • 2 tbsp. Dijon Mustard
  • 2 tsp. Caraway Seeds
  • ½ tsp. Salt
  • 2 tbsp. Brown Sugar

Sliders:

  • 1 Pack 24 ct. Kings Hawaiian Rolls (Savory Butter)
  • 2 lbs. Corned Beef Sliced
  • 14 oz. Baby Swiss Cheese (Two 7oz. Packages)
  • 1 c. Sauerkraut

 

Directions for Gameday Reuben Sliders

  1. Preheat oven to 225°. Low fan if your oven has that option.
  2. In a food processor, combine yellow onion, mayo, ketchup, lemon juice, paprika, and sugar and process until smooth.
  3. Add pickle relish and set aside.
  4. In a small saucepan combine all butter sauce ingredients and heat on low until completely melted.
  5. Using a very large knife (10-12 inches) carefully halve the entire pack of slider buns.
  6. Spread half of the 1000 island dressing over the bottom half of the buns, then 7oz of cheese or 1 package.
  7. Top the cheese with 1lb. of your sliced corned beef, followed by 1 cup of sauerkraut, the rest of the corned beef and finally the remaining cheese.
  8. Spread the remainder of the 1000 island dressing on the top part of the slider buns and top the sandwiches.
  9. Using a small teaspoon, top the sliders with the butter mixture and place in your preheated oven for 30 minutes. You may have butter mixture left over and that is perfectly fine.
  10. Remove from oven and cut them into individual sliders. I like to use picks to keep them from falling apart.  Eat and enjoy!

Recipe Notes

Making the 1000 island dressing is completely optional, store bought dressing would work just fine.  The ingredients I would recommend spending the time and/or money on are the rolls and the meat.  Buying cheap corned beef here will result in cheap tasting sandwiches. I prefer to use the deli at the supermarket so I can control how thick the slices will come out also. It doesn’t hurt that you get to taste the beef when checking its thickness. I also strongly recommend buying the king’s Hawaiian Rolls here.  I’ve used the knock off brands and I’m usually disappointed with the final product.

Recipe Variations

Here’s the fun part about this recipe, you can customize these sliders so many ways. A favorite around my house is a simple ham and cheese. I use a smoked ham, the sweet Hawaiian Rolls and everything bagel seasoning instead of the caraway. If a BLT is your sandwich, put the bacon, mayo, and tomato on the rolls, bake it, then add your lettuce and cut. The possibilities are almost endless.

Baking Times

The goal for these sliders is to just warm the ingredients inside and warm the bread. If you go too warm, you will end up baking the rolls a bit and they become hard quickly. If you have the time, lower your oven temperature, and bake them a bit longer. 200° for 40 minutes should work. 250° is the highest I would recommend, because if you go any higher, you will end up with baked rolls and cold toppings.
